Polpettone di tonno does not belong to one single city or region. It is part of the broader Italian tradition of polpettoni, with a particularly interesting connection to Liguria and its pesce finto, an old preparation made with tuna and potatoes and traditionally shaped like a fish.
Live presentation
Chef Olivieri slices and presents the polpettone with a fresh salad of fennel and orange, dressed with extra-virgin olive oil and Aceto Balsamico di Modena. The bright, crisp salad provides a refreshing contrast to the soft texture and savory flavor of the tuna.
