Primo ®: Award-Winning Extra Virgin Olive Oil
First in name and in fact: it is the first extra virgin olive oil certified DOP Monti Iblei; it is obtained from the olives of the first harvest of the year; it was our first oil to be awarded back in 2001 and has never stopped obtaining successes in the main international competitions. Its history begins on the centuries-old olive trees facing south on the Iblei Mountains, 400 meters above sea level.

Primo was the first Sicilian extra virgin olive oil to obtain the DOP Monti Iblei controlled origin certification. Today it is one of the most sought-after and prized. Because in the kitchen, more than a condiment, it can be considered a real food: it is an intense, robust and very fragrant oil, suitable for substantial first courses, meats and legumes. It enhances grilled fish, soups and salads, bruschetta and caprese. And it is capable of defining, with its intensity, the destiny of each dish.
Origin
Made in Italy. Primo DOP is produced on the Iblei Mountains, at 350-450 meters above sea level, from centuries-old DOP certified olive groves. South-facing. Mainly Tonda Iblea variety.
Harvest
Hand-picked. From September 15 to October 30.
Extraction
Only mechanically, in a latest-generation mill with continuous cycle 4.0 technology, two-phase extraction, without adding water and at a controlled “cold” temperature (less than 27 degrees)
Appearance
Bright green.
Fragrance
Intensely fruity with pronounced notes of green tomato, freshly cut grass and fresh aromatic herbs.
Flavor / Aroma
Full-bodied and intense, bitter and spicy present and balanced, aroma of green tomato and fresh herbs.
Use
Grilled meat and fish, soups and salads, bruschetta or caprese, raw on grilled vegetables and greens.

Our Primo DOP monocultivar extra virgin olive oil contains its own history in its name. It is obtained from the olives of the first harvest of the year, it was our first oil to be awarded back in 2001 and it was the first evo certified DOP Monti Iblei. It was thanks to our long work of experimentation in the field and in the mill that it was possible to start the process for the recognition of what is now considered one of the most prized and sought-after Sicilian DOPs.
