A beloved staple of Apulian tradition, these country-style eggplant fillets capture the essence of homemade preserves. Made with capers and fresh mint, and prepared without artificial preservatives, this recipe brings a taste of Southern Italy’s rustic countryside to the table.
The eggplants are grown in Salento and harvested at peak ripeness between August and September. Every step of the process is done by hand using time-honored methods: the eggplants are carefully selected, peeled, and sliced into thin fillets. To remove any bitterness, they are salted and pressed using the traditional “allu carcu” technique. They are then seasoned with aromatic fresh mint, capers, and a blend of oils and spices, and preserved in sunflower oil with a touch of extra virgin olive oil.
