It is in times of need that ingenuity takes over and creates wonders. Gianduia is one of them. In the 1800s, when Napoleon decided to sabotage his enemy, England, he did so by halting the importation of all products that were arriving from the United Kingdom. Unfortunately for those who had a sweet tooth, cocoa was on the list. Pastry chefs from Piedmont were not discouraged and used hazelnuts as a replacement.
Hazelnut paste, milk and – after the mid-19th century – cocoa as well: these are the ingredients behind the most beloved creamy spread.
Enjoy it with bread, of course, but also try it as an ingredient in cakes or cookies. And why should you resist the temptation to simply savour it by the spoonful?
