Description

The most tender shoots of Catalogna chicory, crunchy as if freshly picked.

A typical product of Salento, delicately sweet and sour.

Crispy and fresh as if just picked, because they are preserved raw: for our puntarelle alla crudaiola we choose the most tender shoots of the Catalogna chicory, a native variety of Salento, in particular from the Galatina area, in the province of Lecce.

The entire process is done by hand, from the removal of the outer leaves to the cutting of the shoots, which we leave to mature for a few days in a delicate sweet and sour dressing. At the end of this step, the shoots or “scattuni”, as we call them in dialect, are jarred in oil, without the addition of aromas, spices or artificial preservatives. In this way our puntarelle alla crudaiola maintain their natural flavor, vitamins and fibers of which they are rich. Try them in pucce and on pinse, but also in a salad or as a side dish for a tartare.
